Ingredients
1 tablespoon unsalted butter
3 large eggs
1 cup whole milk
1 cup all-purpose flour
1/2 teaspoon salt
Instructions
1. Preheat oven to 450°F and place the muffin or popover tin inside while it heats.
2. In a medium bowl, whisk together eggs and milk until smooth.
3. Gradually whisk in flour and salt until batter is mostly smooth; let it rest for 15–20 minutes at room temperature.
4. Carefully remove the hot pan from the oven and add a small amount of butter into each cup to coat.
5. Pour batter evenly into the cups, filling each about halfway.
6. Bake at 450°F for 15 minutes. Do not open the oven.
7. Reduce oven temperature to 350°F and bake for another 15–20 minutes until golden brown and puffed.
8. Remove from oven, pierce the sides of each popover to release steam, and serve hot.
Notes
Popovers must go into a hot pan for a tall rise.
Room temperature ingredients help achieve the perfect texture.
Avoid opening the oven during baking — they’ll collapse!
