This fluffy keto cottage cheese bread is a low-carb, high-protein bread recipe that’s perfect for a ketogenic lifestyle. Made with almond flour, eggs, and cottage cheese, it’s soft, gluten-free, and delicious served fresh or toasted.


Ingredients

1 cup full-fat cottage cheese

4 large eggs

1 cup almond flour

1 ½ teaspoons baking powder

¼ teaspoon salt

1 teaspoon apple cider vinegar

Optional: ½ teaspoon garlic powder or herbs of choice


Instructions

1. Preheat your oven to 350°F and line a loaf pan with parchment paper. Lightly grease it to prevent sticking.

2. In a large bowl, whisk together the eggs, cottage cheese, and apple cider vinegar until smooth. Blend the cottage cheese beforehand if you want a finer texture.

3. Add the almond flour, baking powder, and salt. Stir until the batter is smooth and fully combined.

4. If using optional herbs or seasonings, gently fold them into the batter now.

5. Pour the batter into the prepared pan and spread evenly. Bake for 35 to 40 minutes, or until a toothpick comes out clean from the center.
