Description

This Frozen Hash Brown Potato Soup is a creamy, comforting, and easy-to-make recipe using frozen hash browns, cream cheese, and cheddar for a rich flavor. Ideal for busy weeknights or cozy weekends, this one-pot meal is a family favorite.


Ingredients

1 bag frozen hash browns (32 oz)

4 cups chicken broth

1 can cream of chicken soup (10.5 oz)

2 cups milk

2 cups shredded cheddar cheese

1 block cream cheese (8 oz), cubed

1 small onion, chopped

2 tablespoons butter

Salt to taste

Black pepper to taste


Instructions

1. Melt butter in a large pot over medium heat. Add chopped onion and sauté until soft and fragrant, about 5 minutes.

2. Pour in chicken broth, cream of chicken soup, and milk. Stir to combine and bring to a simmer.

3. Add frozen hash browns directly to the pot. Stir and cook until beginning to soften, about 10 minutes.

4. Add cubed cream cheese and shredded cheddar cheese. Stir until completely melted and smooth.

5. Season with salt and pepper to taste. Simmer for another 5 to 10 minutes.

6. Serve hot, topped with extra cheese, bacon bits, or chopped chives if desired.

Notes

This soup thickens as it cools—add milk or broth when reheating.

Great for freezing: store in airtight containers for up to 2 months.

Shredded hash browns or diced both work—just choose your texture preference.
