Ingredients
1 cup fruit puree
1 cup heavy cream
1/2 cup unsalted butter
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Line an 8×8 baking dish with parchment paper and lightly grease it to make removing the caramels easy after they set.
2. In a saucepan, warm the fruit puree and heavy cream over medium heat until hot but not boiling, then set aside.
3. In another heavy-bottomed saucepan, melt the sugar, corn syrup, and butter together over medium heat. Attach a candy thermometer to the pan.
4. Slowly pour in the warm fruit and cream mixture, stirring constantly. Cook while stirring until the mixture reaches 245°F.
5. Remove from heat, stir in salt and vanilla extract, and pour the hot caramel into the prepared pan.
6. Allow to cool completely at room temperature for several hours or overnight.
7. Once set, remove using parchment and cut into squares. Wrap individually if desired.
