Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup buttermilk

⅓ cup rainbow sprinkles (jimmies)

½ cup unsalted butter, softened (for filling)

1 ¾ cups powdered sugar (for filling)

2 tablespoons heavy cream (for filling)

½ teaspoon almond extract (for filling)


Instructions

1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

2. In a large mixing bowl, beat butter and granulated sugar until light and fluffy.

3. Add egg and vanilla extract to the butter mixture and mix until well combined.

4. Alternate adding dry ingredients and buttermilk to the wet mixture, beginning and ending with the dry.

5. Gently fold in the rainbow sprinkles until just combined.

6. Scoop rounded tablespoons of batter onto a parchment-lined baking sheet, spacing them apart.

7. Bake at 350°F for about 10 minutes, or until the tops spring back when touched. Cool completely.

8. In a bowl, beat the butter, powdered sugar, heavy cream, and almond extract until fluffy. Adjust cream for desired consistency.

9. Spread or pipe the filling onto the flat side of half the cakes. Top each with another cake to make sandwiches.

10. Store in an airtight container in the fridge or freeze individually wrapped.

Notes

These whoopie pies can be made ahead and frozen individually.

Use rainbow jimmies to prevent the colors from bleeding into the batter.

Make sure the cakes are completely cool before adding the filling.
