Ingredients
1 lb chicken breast, boneless and skinless
1 tsp salt
1/2 tsp black pepper
3 garlic cloves, minced
3 tbsp butter
1 1/2 cups heavy cream
3/4 cup Parmesan cheese, shredded
1 tbsp Cajun seasoning
8 oz elbow macaroni
1 cup crispy fried onions
Instructions
1. Boil a large pot of salted water and cook elbow macaroni until al dente. Drain and set aside.
2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
3. In a skillet, melt butter over medium-high heat. Add chicken and cook until golden brown and cooked through.
4. Add minced garlic to the chicken in the last minute of cooking. Stir to coat chicken in garlic butter, then remove from heat.
5. In a separate saucepan, heat heavy cream with 1 tbsp butter over medium heat.
6. Stir in Parmesan cheese and Cajun seasoning. Continue stirring until the sauce is smooth and thickened.
7. Add the cooked macaroni to the sauce and stir until fully coated.
8. Plate the pasta and top with garlic butter chicken bites.
9. Sprinkle crispy fried onions over the top and serve immediately.
Notes
Garlic burns quickly, so add it at the end of cooking the chicken.
You can use rotini, penne, or cavatappi instead of elbow macaroni.
Reheat with a splash of cream or milk to bring back the creamy texture.
