Description

Ingredients

2 large chicken breasts

1 cup grated parmesan cheese

4 tablespoons butter

4 cloves garlic, minced

12 ounces pasta (spaghetti or penne)

2 tablespoons olive oil

1 cup breadcrumbs

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)


Instructions

1. Pound the chicken breasts to even thickness, season with salt and pepper, then dredge in breadcrumbs and grated parmesan.

2. Heat olive oil in a skillet over medium heat. Cook chicken until golden brown and cooked through, about 5-6 minutes per side. Transfer to a plate and keep warm.

3. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve a splash of pasta water, then drain.

4. In the same skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in reserved pasta water to create a sauce.

5. Add cooked pasta to the skillet and toss to coat in garlic butter sauce. Slice chicken and arrange on top of pasta. Garnish with parsley and more parmesan before serving.

Notes

Use freshly grated parmesan for the best flavor and texture.

Reserve pasta water—it helps make the sauce silky.
