Ingredients
4 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
4 garlic cloves, minced
3 tablespoons unsalted butter
2 cups chicken broth
1 cup uncooked white rice
1 cup grated Parmesan cheese
1/3 cup heavy cream
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown and cooked through. Remove and keep warm.
3. In the same skillet, reduce heat to medium. Add butter and garlic, cooking for about 1 minute until fragrant.
4. Pour in chicken broth and bring to a simmer. Stir in rice, cover, and cook on low heat for 15-18 minutes or until rice is tender.
5. Stir in heavy cream and Parmesan cheese. Mix until creamy and smooth.
6. Return chicken to skillet and spoon some rice over the top. Simmer for 2-3 minutes to combine flavors.
7. Garnish with fresh parsley and serve hot.
Notes
This dish is perfect for meal prep as it stores and reheats well.
You can use chicken thighs instead of breasts for a juicier option.
Add a splash of broth or cream when reheating to keep rice creamy.
