Description
This garlic butter chicken with rigatoni and parmesan is the ultimate comfort food for dinner. Juicy seared chicken in a rich garlic butter sauce tossed with rigatoni and topped with parmesan. An easy pasta recipe perfect for busy weeknights or casual gatherings.
Ingredients
1 lb rigatoni
1.5 lbs boneless, skinless chicken thighs
4 cloves garlic, minced
4 tbsp unsalted butter
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
1 cup freshly grated Parmesan cheese
2 tbsp fresh parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, and Italian seasoning, and sear until golden and cooked through. Transfer chicken to a plate.
3. In the same skillet, lower heat to medium, melt butter, and add garlic. Sauté for about 1 minute until fragrant. Add red pepper flakes if using.
4. Return chicken to skillet, toss to coat in garlic butter. Add cooked rigatoni and stir. If dry, add some reserved pasta water.
5. Stir in Parmesan until melted and pasta is coated. Serve hot, garnished with parsley and extra Parmesan.
Notes
Let the pasta rest for a few minutes to absorb more sauce before serving.
Grating fresh Parmesan makes a big flavor difference.
For a lighter version, use chicken breast and reduce the butter slightly.
