Ingredients
4 lamb chops
2 tablespoons butter
4 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon fresh rosemary or thyme, chopped
Instructions
1. Remove the lamb chops from the fridge 20 minutes before cooking to come to room temperature. Pat them dry and season both sides with salt and pepper.
2. Heat the olive oil in a skillet over medium-high heat until shimmering.
3. Add the lamb chops and sear for 3 to 4 minutes per side until a golden crust forms.
4. Lower the heat to medium-low. Add butter, minced garlic, and herbs. Spoon the butter over the chops while they finish cooking for 2 to 3 more minutes.
5. Transfer the chops to a plate and rest for 5 minutes. Drizzle remaining garlic butter from the pan over the top before serving.
Notes
Let the lamb come to room temperature before searing for even cooking.
Use a cast iron skillet for the best sear and heat retention.
Donโt skip resting the meat after cooking โ it locks in the juices.
