Ingredients
1 lb shrimp
3 tbsp butter
4 cloves garlic, minced
3 cups cooked rice
1/2 cup heavy cream
1/4 cup fresh herbs (parsley, dill, or chives), chopped
1 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1/4 cup parmesan cheese, grated
Instructions
1. Heat a pan over medium-high with olive oil and 1 tbsp butter. Add shrimp in a single layer, season with salt and pepper, and sear for 1-2 minutes per side until pink and lightly golden. Remove and set aside.
2. Reduce heat to medium. Add 2 tbsp butter and garlic to the pan. Cook for 1 minute until fragrant but not browned. Return shrimp to pan and toss in the sauce for another minute. Remove from heat.
3. In a separate saucepan, warm the rice with heavy cream and parmesan until creamy. Stir in fresh herbs and lemon juice. Season to taste.
