Ingredients
9 lasagna noodles
1 ½ pounds large shrimp, peeled and deveined
6 cloves garlic, minced
6 tablespoons unsalted butter
1 cup heavy cream
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Instructions
1. Cook lasagna noodles until al dente, then drain and lay flat on parchment paper.
2. In a skillet, melt 2 tablespoons of butter over medium heat. Add garlic and shrimp. Cook until shrimp are pink, then remove from heat and set aside.
3. In the same skillet, melt remaining butter, add more garlic, then pour in heavy cream. Simmer until slightly thickened.
4. Add lemon juice and Parmesan cheese to the sauce. Stir until smooth and creamy.
5. In a greased 9×13 inch baking dish, layer noodles, sauce, shrimp, mozzarella, and Parmesan. Repeat layers until the top.
6. Finish with a final layer of sauce and a generous sprinkle of mozzarella and Parmesan.
7. Cover with foil and bake at 375°F for 25 minutes. Uncover and bake another 10-15 minutes until golden and bubbly.
8. Let it rest for 10 minutes before serving. Garnish with fresh parsley and serve warm.
Notes
Make sure your shrimp are dry before cooking to avoid watery layers.
Let the lasagna rest after baking to help the layers hold together.
For extra brightness, serve with a lemon wedge on the side.
