Ingredients
1 pound ribeye or sirloin steak
2 tablespoons salted butter
3 garlic cloves, minced
1 tablespoon olive oil
8 ounces linguine
1 cup heavy cream
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded fontina cheese
1/2 cup shredded provolone cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Season steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear steak 3–4 minutes per side. Add butter and garlic; baste steak. Let rest 5 minutes before slicing.
2. Bring a pot of salted water to a boil. Cook linguine until al dente. Drain, reserving 1/2 cup pasta water.
3. In a saucepan over low heat, warm heavy cream until lightly bubbling. Add parmesan, mozzarella, fontina, and provolone. Stir until melted. Add reserved pasta water to adjust thickness.
4. Toss linguine in cheese sauce until fully coated. Plate the pasta and top with sliced steak. Drizzle with remaining garlic butter and serve immediately.
Notes
Let the steak rest after cooking to keep it juicy.
Use freshly grated cheese for a smoother, meltier sauce.
Reserve pasta water to adjust sauce consistency as needed.
