Ingredients
1 ribeye steak
1 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
4 tablespoons unsalted butter
4 garlic cloves, minced
8 ounces linguine pasta
1 cup heavy cream
1/2 cup parmesan cheese, shredded
1/2 cup mozzarella cheese, shredded
1/2 cup fontina cheese, shredded
2 ounces cream cheese
1 tablespoon chopped parsley
Instructions
1. Season the steak with kosher salt and pepper. Let it rest for 20 minutes at room temperature.
2. Heat a skillet on medium-high. Add 1 tablespoon butter and sear steak 3–4 minutes each side. Add garlic and 1 tablespoon butter in the final minute. Baste, remove, and rest.
3. Cook linguine in salted boiling water until al dente. Reserve 1 cup pasta water and drain.
4. In a saucepan, melt butter and add garlic. Stir in cream and simmer. Add all cheeses, stir until smooth. Use reserved water to adjust sauce thickness.
5. Toss linguine in cheese sauce. Slice steak against the grain. Plate and top with steak slices. Garnish with chopped parsley and serve hot.
Notes
Let the steak come to room temp before cooking for even searing.
Reserve pasta water to loosen sauce if it thickens.
Always slice steak against the grain for tender bites.
