Description

Garlic Chicken Bites & Creamy Cajun Spinach Artichoke Alfredo Pasta is the ultimate comfort food pasta. Made with garlicky chicken, Cajun-spiced creamy Alfredo sauce, spinach, and artichokes, this easy weeknight dinner is rich, flavorful, and perfect for family meals or entertaining.


Ingredients

1 lb chicken breast

2 tbsp olive oil

4 cloves minced garlic

2 tbsp Cajun seasoning

12 oz pasta

4 oz cream cheese

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach

1 cup chopped artichoke hearts

Salt and pepper to taste


Instructions

1. Boil a large pot of salted water and cook pasta until al dente. Reserve ½ cup pasta water and set pasta aside.

2. Cut chicken into bite-sized pieces and season with Cajun seasoning.

3. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove from skillet.

4. In the same skillet, add more oil if needed and sauté minced garlic until fragrant.

5. Add cream cheese and heavy cream, stirring until melted and smooth.

6. Stir in Parmesan cheese. Add reserved pasta water if sauce is too thick.

7. Mix in spinach and artichoke hearts, cook until spinach wilts.

8. Return chicken and pasta to skillet. Stir everything together and heat through.

9. Taste and adjust seasoning with salt and pepper.

10. Serve hot with extra Parmesan and a pinch of Cajun spice on top.

Notes

Use chicken thighs if you want a juicier bite.

You can substitute kale for spinach if preferred.

For extra heat, add a pinch of cayenne or red pepper flakes.
