Ingredients
1 lb chicken breast or thighs
1/3 cup soy sauce
4 garlic cloves, minced

1 tbsp cornstarch
2 tbsp vegetable oil
1 cup bell peppers, sliced
1 cup broccoli florets
1/2 cup carrots, sliced
2 green onions, sliced
3 cups cooked white rice
1 tsp sesame oil
1 tsp fresh ginger, minced (optional)
1/4 tsp red pepper flakes (optional)
Instructions
1. Cut the chicken into thin slices or chunks. Toss with cornstarch and a bit of soy sauce. Let it marinate briefly.
2. Mix soy sauce, garlic, brown sugar, sesame oil, water, and red pepper flakes in a small bowl to create the sauce.
3. In a large skillet over medium-high heat, cook the chicken in vegetable oil until browned and cooked through. Remove and set aside.
4. Add more oil if needed and stir-fry the bell peppers, broccoli, and carrots until tender-crisp.
5. Return the chicken to the skillet, add the sauce, and toss to coat. Cook until the sauce thickens slightly.
6. Serve hot over cooked white rice. Top with sliced green onions.
