Description

This Garlic Chili Oil Chicken Bites & Cajun Alfredo with Charred Zucchini Twists recipe blends spicy chicken bites, creamy Cajun Alfredo pasta, and smoky zucchini ribbons. A bold, flavorful chicken dinner perfect for cozy nights or casual entertaining.


Ingredients

1 lb chicken breast, cut into bite-sized pieces

3 tbsp garlic chili oil

1 tsp salt

1/2 tsp black pepper

8 oz fettuccine or linguine pasta

2 tbsp butter

3 cloves garlic, minced

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

1 tbsp Cajun seasoning

2 medium zucchinis, sliced into ribbons

2 tbsp olive oil

2 tbsp fresh parsley, chopped (optional)


Instructions

1. Cut chicken into bite-sized pieces and toss with garlic chili oil, salt, and pepper. Let marinate.

2. Slice zucchini into long ribbons using a vegetable peeler. Char in a hot skillet with olive oil until grill marks appear. Set aside.

3. In a separate skillet, sear chicken on medium-high heat until golden and cooked through. Avoid overcrowding.

4. Cook pasta according to package directions. Reserve 1/2 cup pasta water, then drain.

5. In another skillet, melt butter and sautée garlic until fragrant. Add heavy cream and Cajun seasoning. Simmer until slightly thickened.

6. Stir in Parmesan cheese until melted and smooth. Add reserved pasta water as needed to adjust consistency.

7. Toss pasta in the sauce until well coated. Plate pasta, top with chicken, and garnish with charred zucchini twists and parsley.

Notes

Use freshly grated Parmesan for the smoothest sauce texture.

For less heat, reduce the garlic chili oil or blend it with olive oil.

Zucchini can be grilled ahead to save time during final assembly.
