Ingredients

2 chicken breasts

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

2 tablespoons butter

1 tablespoon olive oil

1 pound Yukon Gold potatoes, peeled and chopped

1/2 cup heavy cream

4 large carrots, sliced

1 tablespoon brown sugar

Salt to taste

Black pepper to taste


Instructions

1. Pat chicken breasts dry and season with salt, pepper, and chopped herbs.

2. Heat olive oil in a skillet over medium heat. Sear chicken for about 5 minutes on each side.

3. In the final minute, add garlic and butter to the pan and baste the chicken.

4. Meanwhile, boil Yukon Gold potatoes in salted water for 15 minutes or until fork-tender.

5. Drain potatoes, return to the pot, and add butter and heavy cream. Mash until smooth.

6. Season mashed potatoes with salt to taste.

7. In another pan, heat olive oil and butter for the carrots.

8. Add sliced carrots and cook until tender, about 5–7 minutes.

9. Sprinkle in brown sugar and continue cooking until carrots are glazed.

10. Plate the mashed potatoes, top with sliced chicken, and serve carrots on the side.

Notes

Use fresh herbs for best flavor, but dried herbs work in a pinch.

Add a splash of white wine to the pan while cooking chicken for extra depth.

You can make the mashed potatoes ahead and reheat with a splash of cream.
