Ingredients
1 tablespoon olive oil
4 cloves garlic, minced
1⁄3 cup sun-dried tomatoes, chopped
1⁄2 cup vegetable broth
3⁄4 cup heavy cream
2 cans butter beans (15 oz each), drained and rinsed
1⁄4 teaspoon red chili flakes
1 teaspoon Italian seasoning
1⁄3 cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh basil, optional for garnish
Instructions
1. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant, about 1 minute.
2. Add sun-dried tomatoes and cook for another minute to bring out their flavor.
3. Pour in vegetable broth and heavy cream, stir, and bring to a gentle simmer.
4. Stir in Italian seasoning, red chili flakes, salt, and pepper.
5. Add the butter beans and simmer for 8–10 minutes, allowing the sauce to thicken slightly.

Notes
Let the sauce simmer gently so it thickens without curdling.
Use canned butter beans for speed, but cooked dried beans work too.
Add a pinch more chili flakes if you like extra heat.
