Description

Garlic Parmesan Chicken and Potatoes is a flavorful one-pan meal made with juicy chicken, crispy baby potatoes, roasted garlic, and savory Parmesan. This easy chicken dinner is perfect for family meals, weeknight dinners, and comfort food cravings.


Ingredients

1.5 lbs chicken thighs or breasts

1.5 lbs baby potatoes

6 cloves garlic, minced

0.5 cup grated Parmesan cheese

2 tbsp olive oil

2 tbsp unsalted butter, melted

1.5 tsp Italian seasoning

1 tsp salt

0.5 tsp black pepper

2 tbsp chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 400°F (200°C). Rinse and halve the baby potatoes if needed. Pat the chicken dry and set aside.

2. In a large bowl, toss the potatoes with olive oil, half the garlic, salt, pepper, and Italian seasoning.

3. In another bowl, season the chicken with the rest of the garlic, melted butter, salt, pepper, and Italian seasoning.

4. Spread the potatoes on a large sheet pan. Nestle the chicken in between them. Sprinkle everything with Parmesan.

5. Roast for 35 to 45 minutes, or until the chicken is cooked through and the potatoes are golden and tender.

6. Halfway through cooking, baste the chicken with pan juices and stir the potatoes slightly.

7. Remove from the oven, garnish with chopped parsley, and serve hot.

Notes

Garlic flavor intensifies in the oven—adjust to your preference.

For extra crisp potatoes, broil the pan for the last 3 minutes.

Use bone-in chicken if you prefer juicier, richer flavor.
