Description

Garlic-Parmesan Chicken Bites with Sun-Dried Tomato Cajun Alfredo is a bold, creamy, flavor-packed dinner made with crispy chicken, spicy Alfredo sauce, and charred broccolini. A perfect chicken dinner recipe for weeknights or special occasions.


Ingredients

1 lb chicken breast

1 cup grated parmesan cheese

4 garlic cloves, minced

2 tablespoons olive oil

2 tablespoons butter

1 cup heavy cream

1/3 cup sun-dried tomatoes, chopped

1 tablespoon Cajun seasoning

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 bunch broccolini

1 tablespoon lemon juice

8 oz pasta (optional)


Instructions

1. Cut the chicken breast into bite-sized pieces, pat dry, and season with salt, pepper, and paprika. Toss with parmesan and garlic.

2. Heat olive oil and butter in a skillet over medium-high heat. Add the chicken and sear 3–4 minutes per side until golden and cooked through. Set aside.

3. In the same pan, lower the heat. Add butter, garlic, and chopped sun-dried tomatoes. Sauté until fragrant and softened.

4. Stir in the heavy cream and Cajun seasoning. Simmer until slightly thickened. Add remaining parmesan and stir until melted.

5. In another pan, char broccolini in olive oil over high heat until lightly blackened and tender, about 4–6 minutes. Finish with lemon juice.

6. Return the chicken to the sauce, toss to coat, and simmer for 2–3 minutes. Serve with broccolini and pasta if using.

Notes

Use chicken thighs for a juicier option.

Add more Cajun spice if you want it hotter.

Toss with cooked pasta or serve with roasted veggies.
