Ingredients
1 pound large shrimp, peeled and deveined, tails on
4 tablespoons unsalted butter
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup grated parmesan cheese
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Instructions
1. Rinse and pat dry the shrimp. If using wooden skewers, soak them in water for 30 minutes.
2. Melt the butter in a saucepan or microwave-safe bowl. Stir in the garlic, Italian seasoning, salt, and pepper. Let the mixture rest to infuse.
3. Toss the shrimp in a large bowl with the garlic butter until well coated. Add parmesan cheese and toss again until each shrimp is crusted.
4. Thread shrimp onto skewers. Grill over medium-high heat for 2-3 minutes per side or broil until shrimp turn pink and opaque.
5. Drizzle with lemon juice and garnish with parsley before serving.
Notes
Use jumbo shrimp for best texture on the grill.
Donโt skip drying the shrimpโmoisture prevents the parmesan from sticking.
Parmesan will crisp best on direct heat, so avoid overcooking.
