Description

These Garlic Parmesan Sweet Potatoes are roasted to golden perfection with crispy edges and a cheesy, garlicky coating. Ingredients

2 large sweet potatoes

2 tablespoons olive oil

3 garlic cloves, minced

½ cup grated parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.

2. Peel the sweet potatoes and cut them into 1-inch cubes.

3. In a large bowl, toss the cubes with olive oil, minced garlic, salt, pepper, and half of the parmesan cheese until evenly coated.

4. Spread the potatoes out on the prepared baking sheet in a single layer.

5. Roast for 25 minutes, then flip and roast for another 15 minutes until golden and crisp on the edges.

6. Sprinkle the remaining parmesan over the hot sweet potatoes after roasting.

7. Garnish with chopped fresh parsley if desired and serve warm.

Use freshly grated parmesan for the best melt and crisp.
