Ingredients
2.5 lbs sweet potatoes
3 cloves garlic, minced
2 cups heavy cream
2 tablespoons butter
1 cup freshly grated parmesan cheese
1 teaspoon fresh thyme leaves
1 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F and grease a baking dish.
2. Peel and slice sweet potatoes thinly using a mandoline or sharp knife.
3. In a saucepan, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
4. Stir in heavy cream, salt, pepper, and thyme. Simmer gently for 3-4 minutes, then remove from heat.
5. Arrange a layer of sweet potato slices in the baking dish. Spoon some garlic cream sauce over the layer and sprinkle with parmesan. Repeat until all ingredients are used.
6. Cover with foil and bake for 30 minutes.
7. Remove foil and bake another 20-25 minutes, until golden and bubbling.
8. Let rest for 10 minutes before serving.
Notes
This dish can be prepared ahead and baked fresh before serving.
Feel free to substitute thyme with rosemary for a different herbal twist.
Use a mandoline slicer for even potato slices and best results.
