Description

This Georgia Cracker Salad recipe is a classic Southern dish made with saltine crackers, mayonnaise, tomatoes, and hard-boiled eggs. It’s creamy, crunchy, and perfect for potlucks, BBQs, or an easy summer lunch. If you’re looking for a quick Southern salad recipe, this cracker salad is it!

Ingredients

1 sleeve saltine crackers

1 cup mayonnaise

3 hard-boiled eggs, chopped

1 large tomato, diced

2 tablespoons green onions, chopped

1/4 teaspoon black pepper

1/4 teaspoon salt

Instructions

1. Boil the eggs and let them cool. Once cooled, peel and chop them.

2. Dice the tomato and chop the green onions.

3. Crush the saltine crackers by hand into coarse pieces.

4. In a large bowl, combine chopped eggs, diced tomato, green onions, and crushed crackers.

5. Add the mayonnaise and fold gently to combine.

6. Season with salt and black pepper to taste.

7. Serve immediately to keep the texture fresh and slightly crunchy.

Notes

Let the eggs cool completely before chopping to avoid crumbling.

Use just enough mayo to bind the ingredients, but don’t overdo it.

For best results, mix the salad right before serving.
