Ingredients
1 cup cottage cheese
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 cup almond flour
1/4 teaspoon salt
1/3 cup mini chocolate chips
Instructions
1. Add cottage cheese, maple syrup, and vanilla extract to a blender or food processor. Blend until smooth.
2. Transfer to a mixing bowl and stir in almond flour and salt. Mix until a thick dough forms.
3. Chill the dough in the fridge for 10 minutes.
4. Fold in mini chocolate chips.
5. Scoop and roll into small bite-sized balls.
6. Place the bites on a parchment-lined tray.
7. Refrigerate for at least 30 minutes until firm.
