Ingredients
1 tablespoon olive oil
2 boneless skinless chicken breasts, diced
1 small yellow onion, diced
3 garlic cloves, minced
2 medium carrots, peeled and chopped
2 celery stalks, chopped
1 teaspoon dried thyme
4 cups chicken broth
1 pound potato gnocchi
1 cup heavy cream
2 cups baby spinach
salt and pepper to taste
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add diced onions, carrots, and celery. Cook for about 5 minutes until softened.
2. Stir in garlic and thyme. Cook for another 1 minute until fragrant.
3. Add diced chicken and season with salt and pepper. Cook until chicken is no longer pink.
4. Pour in chicken broth and bring to a simmer. Let cook for 10 minutes to develop flavor.
5. Add gnocchi and cook until tender, about 3 to 5 minutes.
6. Reduce heat and stir in heavy cream and baby spinach. Cook for another 2 to 3 minutes until spinach wilts.
7. Taste and adjust salt and pepper. Serve hot.
Notes
This soup thickens as it sits; add extra broth when reheating if needed.
For a vegetarian version, skip the chicken and use vegetable broth.
Use refrigerated or shelf-stable gnocchi depending on what you have on hand.
