Ingredients
1 ½ pounds baby potatoes
3 tablespoons olive oil
4 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. Wash and dry baby potatoes. Cut any large ones in half to ensure even cooking.
3. In a mixing bowl, combine potatoes, olive oil, garlic, rosemary, thyme, salt, and pepper. Toss until all potatoes are well coated.
4. Spread the potatoes in a single layer on the baking sheet.
5. Roast for 30 to 35 minutes, stirring halfway through, until golden and crispy outside and fork-tender inside.
6. Transfer to a serving dish, garnish with fresh herbs if desired, and serve hot.
Notes
This recipe works well with Yukon Gold or fingerling potatoes too.
Add a sprinkle of Parmesan cheese during the last 5 minutes of roasting for extra flavor.
Make sure not to overcrowd the pan so the potatoes roast and don’t steam.
