Ingredients
1 cup unsalted butter
1/2 cup powdered sugar
2 cups all-purpose flour
4 large egg yolks
3/4 cup granulated sugar
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1/2 cup heavy cream
additional granulated sugar for brûlée topping
Instructions
1. Cream unsalted butter and powdered sugar until light and fluffy.
2. Mix in all-purpose flour until dough forms. Roll into balls, flatten slightly, and press an indent in each. Bake at 350°F for 12–15 minutes until golden at edges. Cool completely.
3. In a saucepan, whisk egg yolks and granulated sugar. Add lemon juice, zest, and heavy cream. Cook over medium heat, stirring constantly, until thickened. Cool slightly.
4. Spoon custard into cookie indents, smooth tops, and chill for 30 minutes.
5. Before serving, sprinkle granulated sugar on top of each cookie and caramelize with a torch or broiler. Let cool briefly to set the crust.
Notes
Make sure cookies are fully cooled before adding custard.
Chill filled cookies at least 30 minutes to set the custard.
Brûlée just before serving for best texture.
