Description

This Greek vinaigrette recipe is a quick and easy dressing packed with Mediterranean flavor. Made with extra virgin olive oil, red wine vinegar, garlic, and herbs, it’s perfect for salads, marinades, grain bowls, and more. This healthy vinaigrette is dairy-free, gluten-free, and vegan-friendly.


Ingredients

0.5 cup extra virgin olive oil

3 tablespoons red wine vinegar

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 garlic clove, finely minced

1 teaspoon dried oregano

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions

1. In a medium bowl or jar, combine red wine vinegar, lemon juice, and Dijon mustard.

2. Stir in minced garlic, dried oregano, salt, and black pepper.

3. Slowly drizzle in olive oil while whisking to emulsify.

4. Taste and adjust seasoning if needed.

5. Store in a sealed jar and refrigerate for up to one week.

Notes

This vinaigrette can also double as a marinade for chicken or tofu.

Shake well before using, as oil and vinegar will naturally separate.

For a sweeter note, add a pinch of sugar or a drop of honey.
