Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup Greek yogurt
1 cup granulated sugar
3 large eggs
1 tablespoon lemon zest
¼ cup fresh lemon juice
½ cup vegetable oil
1 teaspoon vanilla extract
Glaze: ½ cup powdered sugar + 1 tablespoon lemon juice
Instructions
1. Preheat oven to 350°F and grease a 9×5-inch loaf pan. Line with parchment paper.
2. In a bowl, whisk flour, baking powder, and salt.
3. In another bowl, whisk yogurt, sugar, eggs, lemon zest, lemon juice, oil, and vanilla until smooth.
4. Add dry ingredients to wet mixture. Stir until just combined.
5. Pour into the loaf pan and bake for 50–55 minutes until a toothpick comes out clean.
6. Cool in the pan for 10 minutes, then transfer to a wire rack.
7. Mix glaze ingredients and drizzle over cooled loaf.
Notes
This loaf tastes even better the next day.
Make sure not to overmix the batter for best texture.
Store leftovers in an airtight container for up to 3 days.
