Ingredients
4 cod fillets
2 cups cherry tomatoes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh dill, chopped
1 cup Greek yogurt
2 garlic cloves, minced
2 tablespoons lemon juice
1 teaspoon Dijon mustard
Instructions
1. Preheat your oven to 400°F. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes until blistered and caramelized.
2. In a small bowl, combine Greek yogurt, fresh dill, garlic, lemon juice, Dijon mustard, salt, and pepper. Stir until smooth. Chill in the fridge while you prepare the rest.
3. Preheat your grill to medium-high. Pat cod fillets dry, brush with olive oil, and season with salt and pepper. Grill for 3–4 minutes per side, or until the fish flakes easily.
4. Plate the grilled cod, top with roasted tomatoes, and spoon the creamy dill sauce over. Garnish with more dill or lemon juice if desired.
