Ingredients
1 lb flank or sirloin steak
2 medium zucchinis, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1/2 cup Greek yogurt
2 tbsp mayonnaise
1 tbsp lemon juice
2 cups cooked rice or grains
2 tbsp fresh parsley or cilantro, chopped
Instructions
1. Mix olive oil, garlic powder, salt, and black pepper in a bowl. Rub onto steak and zucchini slices. Let marinate for at least 20 minutes.
2. In a separate bowl, whisk together Greek yogurt, mayonnaise, lemon juice, a pinch of salt, and garlic powder to make the creamy sauce. Chill until serving.
3. Preheat grill to medium-high. Grill steak 4–5 minutes per side, depending on thickness. Grill zucchini slices 2–3 minutes per side until charred and tender.
4. Let steak rest 5 minutes before slicing against the grain.
5. Assemble bowls with rice or grains, top with steak and zucchini, drizzle with creamy sauce, and garnish with chopped herbs.
