Description

This grilled steak bowl with creamy sauce and grilled zucchini is a wholesome, protein-packed dinner idea. Featuring tender steak, charred zucchini, tangy yogurt sauce, and hearty grains, it’s the perfect summer meal in a bowl. Great for meal prep, easy weeknight dinners, or grilling season gatherings.


Ingredients

1 lb flank or sirloin steak

2 medium zucchinis, sliced

2 tbsp olive oil

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 cup Greek yogurt

2 tbsp mayonnaise

1 tbsp lemon juice

2 cups cooked rice or grains

2 tbsp fresh parsley or cilantro, chopped


Instructions

1. Mix olive oil, garlic powder, salt, and black pepper in a bowl. Rub onto steak and zucchini slices. Let marinate for at least 20 minutes.

2. In a separate bowl, whisk together Greek yogurt, mayonnaise, lemon juice, a pinch of salt, and garlic powder to make the creamy sauce. Chill until serving.

3. Preheat grill to medium-high. Grill steak 4–5 minutes per side, depending on thickness. Grill zucchini slices 2–3 minutes per side until charred and tender.

4. Let steak rest 5 minutes before slicing against the grain.

5. Assemble bowls with rice or grains, top with steak and zucchini, drizzle with creamy sauce, and garnish with chopped herbs.

Notes

Use sirloin or flank steak for quick grilling and easy slicing.

Let the steak rest before slicing to retain juices.

Chill the sauce in advance for a better flavor contrast.
