This Ground Beef Sweet Potato Power Bowl is a healthy, protein-packed meal with roasted sweet potatoes, seasoned beef, and fresh toppings. Perfect for meal prep or dinner, it’s gluten-free, flavorful, and loaded with nutrients.
Ingredients
1 lb ground beef
2 medium sweet potatoes
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp cumin
1 tsp garlic powder
½ tsp paprika
4 cups mixed greens or spinach
1 cup cherry tomatoes
½ red onion
1 avocado
½ cup Greek yogurt
2 tbsp fresh lime juice
Instructions
1. Peel and dice sweet potatoes into bite-sized cubes. Toss with olive oil, salt, pepper, and paprika. Roast at 400°F for 25-30 minutes, flipping halfway, until caramelized.
2. In a skillet over medium heat, cook ground beef with cumin, garlic powder, salt, and pepper. Break it apart and cook for 8-10 minutes until browned.
3. Mix Greek yogurt, lime juice, and a pinch of salt and garlic powder to make the sauce. Set aside.
4. Slice cherry tomatoes, red onion, and avocado. Rinse and dry mixed greens.
5. Assemble bowls with a base of greens, then add roasted sweet potatoes, ground beef, and fresh toppings. Drizzle with yogurt-lime sauce and serve.
Notes
Use 85/15 ground beef for a juicy result.
To make it spicier, add jalapeños or sriracha.
Store beef and sweet potatoes separately for better texture during meal prep.
