Ingredients
3 pounds oxtail
1 thumb-sized piece fresh ginger, sliced
5 garlic cloves, smashed
3 whole star anise
1 cup raw or roasted unsalted peanuts
1 bunch green onions, chopped
1 bunch fresh cilantro, chopped
2 tablespoons soy sauce
1 tablespoon salt (or to taste)
10 cups water
Optional: 1 tablespoon fish sauce
Optional: 1 teaspoon sesame oil
Optional: chili oil for garnish
Instructions
1. Place oxtails in a large pot and cover with water. Bring to a boil for 10 minutes. Drain and rinse the oxtails under cold water to remove impurities.
2. Return oxtails to the pot. Add sliced ginger, smashed garlic, star anise, and peanuts. Add water to cover ingredients by 1 inch. Bring to a boil, then reduce to a simmer. Cover and cook for 3 hours or until oxtail is tender.
3. Season with soy sauce, salt, and optional fish sauce or sesame oil. Taste and adjust as needed. Add more water if broth reduces too much.
4. Ladle soup into bowls. Garnish with green onions, cilantro, and optional chili oil. Serve hot with rice or noodles.
