Ingredients

2 cups all-purpose flour

2 cups granulated sugar

2 teaspoons baking soda

2 large eggs

1 teaspoon vanilla extract

20 ounces crushed pineapple (with juice)

0.5 cup chopped pecans (optional)

8 ounces cream cheese

0.5 cup unsalted butter

2 cups powdered sugar

2 tablespoons milk or cream


Instructions

1. In a large bowl, whisk together flour, sugar, baking soda, and salt.

2. Add eggs, vanilla extract, and crushed pineapple with juice. Stir until just combined.

3. Fold in chopped pecans if using.

4. Pour batter into a greased 9×13 inch baking dish.

5. Bake at 350°F for 30–35 minutes, until a toothpick comes out clean.

6. Let cake cool completely before frosting.

7. Beat cream cheese and butter until smooth.

8. Gradually add powdered sugar.

9. Thin with milk or cream until frosting reaches spreadable consistency.
