This Hearty Beef & Mushroom Stew is the ultimate cold-weather comfort food. Ingredients
2 pounds beef chuck roast, cut into chunks
1 tablespoon olive oil
2 tablespoons butter
1 cup yellow onion, diced
3 carrots, peeled and chopped
3 cloves garlic, minced
8 ounces cremini mushrooms, sliced
2 tablespoons tomato paste
1 tablespoon all-purpose flour
1 cup red wine (optional)
4 cups beef broth (low sodium)
2 sprigs fresh thyme
1 bay leaf
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
Instructions
1. Toss the beef chunks in flour, salt, and pepper to coat evenly.
2. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then remove and set aside.
3. Add butter to the pot, followed by onions, carrots, and mushrooms. Saute until softened, about 6–8 minutes.
4. Stir in garlic and tomato paste and cook for another minute until fragrant.
5. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it reduce slightly, about 3–5 minutes.
6. Return the beef to the pot and pour in the beef broth. Add thyme and bay leaf. Bring to a simmer.
7. Cover, reduce heat to low, and let the stew simmer gently for about 2 hours or until the beef is fork-tender.
8. Remove bay leaf and thyme sprigs. Taste and adjust seasoning with salt and pepper if needed.
9. Serve warm with crusty bread or mashed potatoes.
Notes
This stew gets better the next day as the flavors continue to meld.
You can freeze leftovers for up to 3 months in an airtight container.
Add potatoes or parsnips for extra heartiness if desired.
