Ingredients
2 cups graham cracker crumbs
1⁄2 cup unsalted butter, melted
16 oz cream cheese, softened
3⁄4 cup granulated sugar
2 large eggs
1⁄3 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
Powdered sugar, for dusting (optional)
Instructions
1. Preheat oven to 325°F and line a baking pan with parchment paper.
2. Mix graham cracker crumbs and melted butter. Press firmly into the bottom of the pan to form a crust. Bake for 10 minutes and let cool slightly.
3. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
4. Stir in lemon juice, zest, vanilla extract, and flour until fully incorporated.
5. Pour mixture over crust and spread evenly.
6. Bake for 25–30 minutes until the center is set but slightly jiggly.
7. Cool at room temperature, then refrigerate for at least 3 hours.
8. Lift using parchment, slice into squares, and dust with powdered sugar if desired.
