Ingredients
1 cup semi-sweet chocolate, chopped
1 cup heavy cream
1 tablespoon gelatin powder
3 tablespoons water
1 teaspoon vanilla extract
0.5 cup sugar
1.5 cups raspberries, fresh or frozen
0.25 cup butter, melted
2 eggs
0.5 cup flour
Instructions
1. Preheat oven to 350°F and line a springform pan with parchment paper.
2. Melt butter and half the chocolate together until smooth.
3. Stir in sugar, eggs, and vanilla extract.
4. Fold in flour and pour into pan. Bake for 20 minutes. Let cool.
5. In a small bowl, bloom gelatin in water for 5 minutes, then heat to dissolve.
6. Melt remaining chocolate and mix in gelatin.
7. Whip heavy cream to soft peaks and gently fold into chocolate mixture.
8. Spread mousse over cake base. Chill in fridge for 1 hour.
9. Puree raspberries and strain to remove seeds.
10. Heat puree with sugar and gelatin until smooth. Cool slightly.
11. Pour raspberry glaze over mousse layer and chill for 2 hours.
12. Once set, remove from pan. Garnish with berries or whipped cream and serve.
Notes
This cake can be made a day ahead and stored in the fridge.
Use couverture chocolate for the smoothest mousse.
Chill your mixing bowl before whipping cream for best results.
