Ingredients
4 bone-in, skin-on chicken thighs
4 garlic cloves, minced
2 tablespoons lemon juice
1 teaspoon lemon zest
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
3 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Season chicken thighs with salt and pepper on both sides.
2. Heat olive oil in a large oven-safe skillet over medium-high heat.
3. Place chicken thighs skin-side down and sear for 5–7 minutes until golden brown.
4. Flip the chicken and cook an additional 2 minutes.
5. Reduce heat to medium-low and add butter to the skillet.
6. Once butter is melted, stir in minced garlic, rosemary, and thyme. Cook for 1 minute.
7. Add lemon juice and zest, stir to combine, and spoon sauce over chicken.
8. Transfer skillet to a preheated oven at 375°F. Roast for 20–25 minutes, or until chicken reaches 175°F internally.
9. Remove from oven, rest for 5 minutes, and spoon more sauce over top before serving.
