Ingredients
1 lb chicken breast
12 oz pasta (penne or rotini)
1 packet Hidden Valley Ranch seasoning mix
1 cup heavy cream
4 oz cream cheese
1 cup shredded cheddar cheese
2 cloves garlic, minced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
Instructions
1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear until golden and fully cooked. Remove and slice.
2. In a pot, bring salted water to a boil and cook pasta according to package directions. Drain and set aside.
3. In the same skillet, sauté garlic until fragrant. Stir in heavy cream and ranch seasoning. Let simmer.
4. Add cream cheese and stir until melted into the sauce.
5. Mix in shredded cheddar cheese and let it melt completely.
6. Add cooked pasta and sliced chicken to the skillet. Stir to combine and coat everything in the sauce.
7. Simmer for a few more minutes to allow flavors to blend.
8. Serve hot, optionally topped with parsley or extra cheese.
Notes
This recipe works great with leftover or rotisserie chicken.
For extra heat, try a pinch of red pepper flakes in the sauce.
