This High-Protein Creamy Ranch Pasta Salad is a delicious and filling cold pasta dish made with grilled chicken, Greek yogurt, ranch dressing, and crunchy veggies. Perfect for meal prep, healthy lunches, or a summer BBQ. High-protein, easy to make, and packed with flavor.
Ingredients
2 cups cooked pasta
2 cups grilled chicken breast, diced
1 cup plain Greek yogurt
2 tablespoons ranch seasoning mix
1⁄4 cup mayonnaise
1 cup cherry tomatoes, halved
1 cup cucumber, chopped
1 red bell pepper, diced
1⁄2 cup shredded cheddar cheese
2 green onions, sliced
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
Instructions
1. Cook your pasta according to package instructions. Drain and rinse under cold water to cool it quickly.
2. In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, and ranch seasoning mix until smooth.
3. While the pasta is cooling, prep your veggies and chicken: dice the grilled chicken, halve the cherry tomatoes, and chop the cucumber, bell pepper, and green onions.
4. Add the cooled pasta, grilled chicken, and vegetables to the bowl of dressing. Mix until everything is evenly coated.
5. Fold in shredded cheddar cheese. Add salt and black pepper to taste.
6. Chill the pasta salad in the fridge for at least 30 minutes before serving for best flavor.
Notes
Make sure the pasta is completely cooled before mixing to prevent the dressing from separating.
Add more Greek yogurt or a splash of milk after refrigerating if the salad becomes too thick.
Use rotini, penne, or chickpea pasta to hold the dressing better and boost protein.
