Description
High Protein Egg Bites are a fluffy, easy meal prep breakfast made with eggs, cottage cheese, cheddar, turkey bacon, and vegetables for a protein-packed, low carb start to the day.
Ingredients
8 large eggs
1 cup cottage cheese
1 cup shredded cheddar cheese
4 slices turkey bacon, cooked and chopped
1 cup baby spinach, finely chopped
1/3 cup red bell pepper, finely diced
2 green onions, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
Olive oil or cooking spray for the pan
Instructions
1. Preheat the oven to 325°F and grease a 12 cup muffin tin well with olive oil or cooking spray.
2. Cook the turkey bacon until lightly crisp, let it cool, and chop it into small pieces.
3. Add the eggs, cottage cheese, shredded cheddar, salt, black pepper, and garlic powder to a blender and blend until smooth.
4. Stir in the chopped turkey bacon, spinach, red bell pepper, and green onions.
5. Pour the mixture evenly into the prepared muffin cups, filling each about three quarters full.
6. Bake for 20 to 25 minutes, until the centers are set and the tops are lightly puffed.
7. Let the egg bites cool in the pan for 5 minutes, then remove and serve warm or store for later.
Notes
These egg bites reheat very well, so they are perfect for meal prep breakfasts.
Blend the egg base until fully smooth for the softest texture.
Do not overbake or the egg bites can turn rubbery instead of tender.
