Description

This Hobo Casserole with Ground Beef & Potatoes is a hearty, old-fashioned dinner classic made with layers of ground beef, thin-sliced potatoes, creamy mushroom soup, and cheddar cheese. Perfect for busy weeknights, meal prep, or comforting family meals, this ground beef casserole recipe is easy to make, budget-friendly, and freezer-ready. A must-try for lovers of nostalgic American casseroles.

Ingredients

1 pound ground beef

4 medium potatoes, thinly sliced

1 can cream of mushroom soup (10.5 ounces)

1 cup milk

1 1⁄2 cups shredded cheddar cheese

1 teaspoon salt

1⁄2 teaspoon black pepper

1⁄2 teaspoon garlic powder

1 small onion, chopped

2 tablespoons butter (optional)

Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. In a skillet over medium heat, cook the ground beef and chopped onion until browned. Drain the fat.

3. Season the cooked beef mixture with salt, pepper, and garlic powder.

4. Layer half of the sliced potatoes in the bottom of the dish. Add half the beef mixture on top. Repeat with the remaining potatoes and beef.

5. In a small bowl, mix the cream of mushroom soup with milk until smooth. Pour evenly over the layered ingredients.

6. Sprinkle the cheddar cheese evenly over the top.

7. Dot with small pieces of butter if using.

8. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until the cheese is golden and potatoes are fork-tender.

Notes

Use a mandoline slicer to ensure thin, even potato slices.

You can substitute ground beef with ground turkey or pork.

Add a layer of frozen peas or corn for extra flavor and color.
