Ingredients
2 tablespoons olive oil
1 medium yellow onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
8 cups low-sodium chicken broth
1 ½ pounds boneless, skinless chicken breasts or thighs
2 bay leaves
2 cups egg noodles
¼ cup fresh parsley, chopped
Salt and black pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery. Cook until softened, about 5–7 minutes.
2. Stir in minced garlic and cook for 1 more minute until fragrant.
3. Pour in chicken broth, add chicken and bay leaves. Bring to a boil, then reduce to a simmer for 20–25 minutes or until chicken is cooked through.
4. Remove chicken, shred with forks, and set aside. Discard bay leaves.
5. Add egg noodles to the pot and cook according to package instructions until just tender.
6. Return shredded chicken to the pot. Stir in chopped parsley and season with salt and pepper. Simmer 2–3 minutes and serve warm.
Notes
This soup freezes best without the noodles; add fresh ones when reheating.
Use bone-in chicken for added richness if preferred.
Squeeze fresh lemon juice at the end for a flavor boost.
