Ingredients
2 cups elbow macaroni
2 cups whole milk
1 cup evaporated milk
2 large eggs
2 cups sharp cheddar cheese, shredded
2 cups Monterey Jack cheese, shredded
1 teaspoon salt
0.5 teaspoon black pepper
1 tablespoon butter
Instructions
1. Bring a large pot of salted water to a boil. Cook the elbow macaroni until just al dente. Drain and set aside.
2. In a large bowl, whisk together the whole milk, evaporated milk, and eggs until smooth. Stir in salt, pepper, 1 1/2 cups sharp cheddar, and 1 cup Monterey Jack.
3. Preheat oven to 375°F and butter a 9×13-inch baking dish. Add half of the cooked macaroni, then layer with half of the remaining cheeses. Pour half the milk mixture over it. Repeat with the rest of the pasta, cheese, and milk mixture.
4. Bake uncovered for 35 to 40 minutes, until the top is golden and bubbling. Let rest for 5 minutes before serving.
