Ingredients
½ cup cottage cheese
2 large eggs
½ cup almond flour
⅓ cup unsweetened cocoa powder
⅓ cup keto sweetener (erythritol or monk fruit)
1 teaspoon vanilla extract
½ teaspoon baking powder
⅛ teaspoon salt
Instructions
1. Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper.
2. Blend the cottage cheese in a food processor until completely smooth.
3. In a mixing bowl, whisk the blended cottage cheese, eggs, vanilla extract, and sweetener until well combined.
4. Add the almond flour, cocoa powder, baking powder, and salt. Mix until a thick batter forms.
5. Pour the batter into the prepared baking pan and spread evenly.
6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean.
7. Allow the brownies to cool completely before slicing into 9 pieces.
