Description

Homemade Meatball Stroganoff is the ultimate comfort food, made from scratch with tender beef meatballs, creamy mushroom sauce, and buttery egg noodles. Perfect for a cozy family dinner. Try this easy meatball stroganoff recipe tonight!


Ingredients

1 pound ground beef

1/2 cup breadcrumbs

1 large egg

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

2 cups beef broth

3/4 cup sour cream

2 tablespoons all-purpose flour

12 ounces egg noodles

2 tablespoons butter

1 tablespoon chopped fresh parsley (optional)

Salt and pepper to taste


Instructions

1. In a large bowl, mix ground beef, breadcrumbs, egg, half of the chopped onion, and one minced garlic clove. Season with salt and pepper. Form into 1-inch meatballs.

2. Heat 1 tablespoon butter in a skillet over medium heat. Brown the meatballs in batches. Set aside.

3. In the same skillet, add more butter if needed. Sauté the remaining onion until soft. Add garlic and mushrooms; cook until mushrooms are browned.

4. Sprinkle flour over the mushroom mixture. Stir and slowly add beef broth. Simmer until slightly thickened.

5. Return meatballs to the skillet. Simmer gently for 15 minutes, or until fully cooked.

6. Reduce heat and stir in sour cream. Do not boil.

7. While meatballs simmer, cook egg noodles per package directions. Drain and toss with butter.

8. Serve the meatballs and sauce over noodles. Garnish with parsley if desired.

Notes

Make sure not to boil the sauce after adding sour cream to prevent curdling.

Use 80/20 ground beef for juicier meatballs.

Freeze extra meatballs and sauce separately for a quick future dinner.
