Ingredients
2 boneless skinless chicken breasts
3 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons olive oil
3 cloves garlic minced
1 cup cherry tomatoes halved
1 small red onion sliced
1 teaspoon salt
1/2 teaspoon black pepper
Fresh basil for garnish (optional)
Instructions
1. Slice the red onion, halve the cherry tomatoes, and mince the garlic. Pat the chicken dry and season with salt and pepper.
2. In a bowl, whisk together balsamic vinegar, honey, olive oil, and minced garlic to make the glaze.
3. Heat a large oven-safe skillet with olive oil over medium-high heat. Sear chicken 2 to 3 minutes per side until golden.
4. Scatter tomatoes and onions around the chicken in the skillet. Pour the balsamic glaze over all ingredients.
5. Bake in a preheated oven at 400°F for 15 to 20 minutes until chicken is fully cooked and veggies are roasted.
6. Garnish with fresh basil and spoon the pan sauce over chicken before serving.
Notes
This dish can be made with chicken thighs if preferred.
Add mushrooms or zucchini if you want extra veggies.
