Ingredients
2 large sweet onions
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika or cayenne pepper
1 egg
1 cup cold sparkling water or club soda
Oil for frying (vegetable or canola)
Instructions
1. Peel onions and slice into 1/2-inch thick rings. Separate layers and set aside the larger ones.
2. In a shallow bowl, combine flour, cornstarch, salt, pepper, and paprika or cayenne.
3. In another bowl, whisk egg and sparkling water until smooth. Stir in baking powder.
4. Dredge onion rings in the dry flour mix, then dip into the wet batter until fully coated.
5. Heat oil in a deep pot to 350°F. Fry onion rings in small batches for 2-3 minutes or until golden.
6. Transfer to paper towels to drain. Sprinkle with additional salt while warm.
7. Serve immediately with dipping sauce or alongside your favorite meal.
Notes
This batter works best when the sparkling water is cold.
Use sweet onions like Vidalia for the best mellow flavor.
Don’t overcrowd the oil when frying to maintain a crisp texture.
